We got our Christmas tree this weekend!  We don’t have much room to work with, so we couldn’t do anything very big.

Once we got the tree situated and completed (while listening to LOTS of Christmas music), PJ started in on the BEST cookies I’ve ever had.  He found a recipe for Ginger, Toffee, Chocolate Chip cookies.

So now, we’re relaxing after a big day of cleaning the house top to bottom and hanging out with our little visitor for the next couple days

Little Bear Houtsma!

His Mom and Dad are currently at the hospital getting ready to welcome their first baby girl into the world.  We love you guys and we’re thinking about you.  Bear is in good hands!

**Baby Downey Update**  We have our 38 Week doctors appt. on Tuesday so I’ll be back with a complete update then.  In the meantime, I leave you with a shot of my contorted stomach.  That bulge on the right is Baby D’s back.  Head is down and butt is back towards my ribs on the right side.  He/She was moving all about while I wrote this post and ended up sitting there long enough for me to snap this picture.  Thankfully it didn’t last long, because it really wasn’t all that comfortable.

Stinkin’ Good Leftover Pie

I’m sure you’re part of the millions who have been eating leftovers since turkey day ended.  We didn’t get into ours right away because we have been on the go with my folks in town which means a few meal out.  Last night, PJ put the leftovers to use and seriously blew my socks off with this recipe.  I realize this comes a bit late for most since you’re probably happy not to see the sight of leftovers in your fridge anymore, but pocket this one for next year.  It’s incredible.

We’re big fans of Mark Schlereth’s Stinkin’ Good Green Chili.

You can find it at King Soopers in the frozen section and it’s amazing in it’s own right.  PJ found a recipe on his website about what to do with your Thanksgiving leftovers.  And his suggestion?  Make a pie of course!  I was skeptical, but here’s what you need:

Ingredients:
2 unbaked pie crusts
2 cups diced turkey meat
1 cup mashed potatoes
1 cup stuffing
1 cup grated jack or cheddar cheese (optional)
1 15oz. container or “Stinkin” Good Green Chile VEGETARIAN
Preheat oven and baking sheet to 375 degrees

Mix turkey, potatoes, stuffing, cheese and Green Chile in bowl.  Pour mix into pie shell and spread out evenly, cover with second pie crust, crimp together and slit crust with knife several times.  Place onto baking sheet in oven and cook for 30-35 minutes or until crust is golden brown.  **NOTE: We had to cook ours for about an hour since the crust just didn’t look done**

What you have is this (I know it’s all the same color, but trust me on this…it’s good!):

It was incredible and I went on to have it for lunch today too.  Now, I’m officially turkey’d out!  Baby D likes it though!  Kicking up a storm, but what’s new these days.
